Daniel Orr is the chef owner of FARMbloomington. This establishment is the result of his work around the world, from New York to France to the Caribbean. To Orr, simplicity is beauty. As a chef, Orr draws from a lifelong curiosity about individual ingredients combined with extensive training in the art of finding food's true essence and flavor. The result is simple, yet sophisticated; the best of American food tempered by classic European training. He calls his cuisine “real food.” By working in exotic places and traveling throughout the world, his “real food” has a truly global accent.

Orr's Spice Blends are designed to bring an enormous range of flavors to dishes while cutting back on fat. They are absolutely not menu specific, You and your palate should decide which flavors and aromas match which foods. They are created to enhance, not overpower.

Aux Poivres (Mixed Peppers)  DO630  1.7 oz  $6.00    Six different peppers with coriander are used to make this magnificent blend you can use to enhance many dishes you prepare. Great for scallops, ribs or tuna filet as a crunchy rub, or mix with Regime Blend and brown sugar for an "oven-barbequed" flavor.

Regime Blend  DO631  1.2 oz  $6.00    A blend of coriander, mustard and star anise with selected spices and peppers to create a magnificent seasoning for nearly everything. Use to saute chicken livers, shrimp, roasts of all kinds, in slow cooking vegetables, add it to rice, experiment, play with flavors and reap the rewards from your family and friends.

Sweet Season  DO632  1.2 oz  $6.00    An exotic blend of pomegranate, fennel and star anise with ginger, annatto and bay leaves with a light touch of other spices to amaze and delight your guests with any dish you serve. Use in baking, in custards and creme bruléé, broil shrimp, make scallop stew or add flavor to Moroccan couscous.

Russian Red  DO633  1.3 oz  $6.00    Fennel, annatto and caraway, with a light touch of cinnamon, star anise and cayenne, just a whisper of juniper berries and orange peel with spices for a Tsar's table. Flambé red berries with vodka and Russian Red, sweeten with honey and serve with lemon sorbet. Make traditional borscht, sauté chicken thighs with lemon and dried apricots.

Greek Garlic Rub  DO634  1.7 oz  $6.00    Use to season any dish instead of using salt. Add great flavor with a combination of garlic, peppers and fennel. Sprinkle it on, rub it in, make a marinade. Add to oil and vinegar for an outstanding salad dressing.

Mellow Yellow  DO635  1.3 oz  $6.00    Tumeric, cardamom and coriander with fennel and mustard seeds and the elegant saffron with pepper, orange and spices. A fragrant and flavorful "scent" for any dish you prepare. Golden spiced goat cheese, lamb and chicken dishes, vegetables, on pastas, in curries and tomato confit, with honey and spices, and especially in rice.

Brittany Salt  DO637  2.2 oz  $6.00    The salt Daniel uses everyday is Brittany Salt from Brittany, France. Slightly grey in color, it tastes wonderfully of the sea.
